Learning objectives

The aim of this course is to provide basic scientific and academic skills and abilities about:
raw materials, influence of parameters of technological procedures on quality of intermediate, secondary and final products of alcoholic beverage technologies; regulations, normative acts and standards for the products of this technology as well as specific methods for controlling the quality of finished products.

Learning outcomes

After successfully mastering of this course students will acquire for independently planning, organizing and conducting selected tests and methods of quality control of alcoholic beverages, as well as to show knowledge of the characteristics of these products, in order to be able to participate independently and in team in the control and management of the quality of these products. Also, students should be familiar with regulations, normative acts and standards for these products, in order to give expert opinion and quality assessment of these products.

Course contents

Introduction to alcoholic beverages technology; distribution of alcoholic beverages; legal and technical conditions for the production of alcoholic beverages; quality control of raw materials and auxiliary materials; industrial process of alcohol production; producing refined alcohol and controlling its quality; production of alcoholic beverages (brandy, liqueurs, gin, rum, vodka, whiskey, etc.); quality control of intermediate, secondary and final products of alcoholic beverage production process; basics of sensory assessment of alcoholic beverages.
